The Paul John Distillery was founded in 2004 in Goa, in the south east of India, and in a few years it has earned the esteem and admiration of enthusiasts and connoisseurs all over the world. For the aging of his Whiskeys, Paul John almost exclusively uses ex-bourbon barrels. It has recently introduced Sherry barrels but they are used only for particular releases. All whiskeys are bottled without cold filtration, do not contain caramel or dyes. Peat is the only ingredient that is not produced in India but imported directly from Scotland. The types of peat used are two: Islay, strong and pungent with a strong medicinal scent, and Aberdeen, more herbaceous and vegetal.
DIFFERENCE WITH SCOTTISH SINGLE MALTS
The Single Malt Whiskeys produced by Paul John are unique for a number of reasons. First of all Paul John Distillery uses exclusively Indian malt for its whiskeys. The ear of Indian malt has six rows of grains, unlike the European one which has two. For this reason it is richer in proteins and fatty acids which result in more oily distillates than Scottish ones. Another fundamental factor is the tropical climate of Goa. The high temperatures mean that the Angel Share of its whiskeys is between 8% and 10% a year, compared to 2% -3% in Scotland. As a result, Whiskeys ripen much faster. It is estimated that 10 years of tropical aging equals 25 years of aging in Scotland.
