Bitter, a very fine, tied to the history and to the ancient usages of the territory of the mountain from which it takes its name, the Amaro Sibilla was invented in 1868 by Girolamo Varnelli, who put the fruit of his great experience herbal to have a product that would also be a “remedy” for the shepherds of the transhumance. Still, this bitter, is obtained from a decoction on the fire wood of gentian and other medicinal plants. Already won an award in Rome in 1902, and in Turin in 1909, today, the Amaro Sibilla, for its historicity and for the same quality of taste and ingredients, has been recognized by the expert tasters as one of the top-and the absolute in the ranking of the amari.
How to eat it
Traditionally enjoyed as an excellent end of the meal, this bitter has the characteristics of structure, aroma and colour also very appreciated by many a bartender who, in addition to serve, smooth, find it very interesting with ice, with orange juice, carbonated, cola, and mixed with vermouth or wine. Nice version of the spritz.
Color: Brown, firm, dark brown head.
Smell: The aroma is very intense of bitter herbs, dried fruit (chestnuts, walnut husk) on the bottom you will recognize hints of coffee and honey.
Taste: Sweetish at the beginning due to the effect of the honey, then surprises an intense and persistent feeling bitter and tannic structure that lasts over time. This angularity is softened by the fine aromas and delicate sweet chestnuts, honey, dried fruit, vanilla and coffee.
Final thoughts: Considering the high content of herbs, roots, barks and honey is useful in an aperitif or to conclude the meal.
How to Serve: drink neat, with ice or as a hot drink if warmed up with a scorzettina of orange or lemon. Delicious, thirst-quenching when mixed with sparkling water or gas, is the aperitif, original and different with the white vermouth and a few drops of gin.
